Vegas - Dec 2025

We flew to Vegas for a long weekend - mainly to see Zac Brown at the Sphere.  Rak, Kelly (Rak's girlfriend), Kim and Tom joined us as well.

Accommodation:

We stayed at Marriott Grand Chateau where we got a two bedroom condo and a separate one bedroom - this is a time share that Tom's friend is a member of.  The place did not have a lot of amenities but the rooms were large, comfortable and clean, the hotel was convenient to the strip and the price was better than most Vegas hotels!

Activities:

Neon Museum - Rak, Keith and Shawna went to this museum before the Snarrs arrived. It was cool to see some of the nostalgic signs lit up at night. We did the 'history' tour which was about 45 minutes and we learned about some of the hotels as we walked by the signs. Definitely recommend this activity.

Walk the Strip - We walked around the strip stopping into some of the hotels to see the Christmas decor.

Zac Brown Concert - The main event of the weekend - we had great seats (section 204) at the Sphere which allowed us to see the band and the screens. The band had just dropped a new album so they played a mix of new and old songs. The concert was a bit weird with Zac playing rerecorded monologues between songs but the music was great as were the imagery on the screens. After the concert, we did some bar hopping staying up until 3am!

Arte Museum - We all went to this museum on Sunday to kill a bit of time before going to the airport. It's an experimental art museum. We were not that impressed!

Restaurants / Bars:

Zuma - Keith and Shawna had dinner here the night before everyone else arrived. It's modern Japanese and everything was delicious. We joked that the Japanese should come to the US to learn how to make good Japanese food. We had sashimi, roasted cauliflower, miso cod, potatoes and mushrooms.

Momofuko - Keith, Shawna and Rak had lunch here sharing some bao buns and a noodle dish - all tasty.

The Griffin - Keith, Shawna and Rak had a drink here before meeting the Snarrs for dinner. The bar is cool with cozy fireplaces. 

Atomic Liquors - Keith, Shawna and Rak had a drink here before meeting the Snarrs for dinner. The bar has quite a bit of history but it's not that unique inside. 

Lotus of Siam - The Snarrs arrived later on Friday so we joined them here for a later dinner sharing a bunch of dishes, all of which were very good.  We had all been to this restaurant several times before as it's a Vegas institution - but it's now in a new location in a nicer restaurant.

Palette Tea Lounge and Dim Sum - We had lunch here sharing some veggie dishes and dumplings.  Food was OK.

Tamba - Rak had met the GM at this restaurant and he really liked the food so we had dinner here before the concert. We shared a few appetizers, entrees and desserts for the table - all very good.  They also have unique cocktails. The restaurant is really nice as well. 

Kamu Karaoke - After the concert, we got a karaoke room at this bar for about an hour, signing our hearts out.  Apparently Tom won 'best karaoke song selections'.

Harrah's Las Vegas Piano Bar - After karaoke, we popped into this place singing along with the crowd. The guys playing the piano were not the best singers but it was still fun.

Ole Red - Rak and Kelly had returned to the hotel and as we were walking back from the Piano Bar, Kim decided we 'needed' one more beer so we stopped here. There was a live band that was supposed to be country but they didn't really do any country songs.

Rosa Mexicana - On Sunday, we had lunch here, sharing guac for the table and then Keith and Shawna split a duck enchilada.  Food was pretty good.

Arizona and Vegas - March 2025

To kick off our Spring trip, we spent one week in AZ and Vegas before heading to DC for a month. We had missed this leg of our West Coast trip in 2024 so decided to come back to spend a little time here.

Arizona

We spent four nights in Phoenix at Rak's place, spending time with him and Kelly.  We arrived on Friday morning when Rak picked us up at the airport. He made us a yummy risotto lunch and then we chilled until we went out that evening at the Global Ambassador hotel across the street from his apartment.  We had a drink at their rooftop bar and then had dinner at Le Ame, their French/steak restaurant in the lobby.  We shared a steak and a short rib dish - delicious!

On Saturday, we went for a 1.5 hour hike in Piestewa Peak park - it was great being outside and seeing the desert landscape again.  We had lunch at Nelson's, a fish market that also does sandwiches - although their sandwiches have quite a bit of mayo so was not our favorite.  We hung out at Rak's place that afternoon as he cooked for a dinner party that evening.  He made a bolognese with polenta and Shawna made semolina cake for dessert.  Rak had two friends in town so they came over along with another friend who lives locally.  Kelly also joined us.  The dinner was great and was fun to hang out with his friends.

On Sunday, we had brunch at Otro Cafe, a great Mexican place - we had avocado toast and huevos rancheros with brisket - very tasty.  That afternoon, we went to one of the spring training baseball games - Giants vs the A's.  We got to and from the game with a Waymo, self-drive taxi - quite cool! And that evening, we had amazing ramen at Mensho.

On Monday, we had lunch with Jen (Shawna's colleague from Cigna) and Todd at Cornish Pasty - our favorite lunch spot. We had our usual greek salad and spicy asiago chicken pasty.  We chilled that afternoon and Rak made dinner - a tasty pasta dish.

Sedona

On Tuesday, we drove to Sedona, staying two nights at Arabella.  The room was nice sized with a view of the pool and the surrounding red rocks.  However, the hotel could use some updating.

We had dinner the first night at Mole, a Mexican restaurant on the property of our hotel - we shared the cornbread, Mexican corn and guacamole with crab meat for appetizers and then had the flank steak for our entree.  Everything was delicious.

The next day, we hiked the Cathedral Rock Loop: Hiline and Templeton Trails.  It took us 3 hours and we hiked for 7.8 miles, gaining close to 1K in elevation.  We had not done this specific trail before and decided it was definitely our favorite.  Along the way, you have amazing views of Cathedral, Bell and Courthouse rocks.  We rewarded ourselves with lunch at The Hudson, our favorite lunch spot.  We sat out on the deck and shared the meatball appetizer (which is humungous and delicious) and the kale salad with salmon (tasty but they could have chopped the kale more).

That evening, we had dinner at our favorite restaurant, Mariposa.  We started with drinks on the patio while watching the sunset and then had a wonderful dinner of empanadas, lamb, mushrooms and cheesy potatoes.  This place never disappoints!

Louisiana

We left one day early from this segment to do a detour trip to Louisiana.  While in Phoenix, we found out that Nicole, Shawna's sister-in-law had passed away.  She had a car accident one week prior due to a heart related event and had not been responsive since.  The doctors said she had significant brain damage and would not recover so they took her off the machines and she passed away on March 17th, Danny's birthday.  We flew to Louisiana for just one night, attending the visitation, funeral, burial and reception afterwards before flying out to go to Vegas.

We had found out that Nate Bergatze was going to do a show in Vegas so we coordinated to meet up with Eva and Stacie (Shawna's former colleagues) and their spouses, Brian and Lucas, for three nights.  And since we decided to go, Eva and Brian decided to make their marriage legal by doing an Elvis wedding! Apparently, while they got married a year earlier in Sedona, it was a spiritual one and not 'official'. We stayed at the new Fountainbleau hotel which is a gorgeous hotel.  Our room really nice!

We got there late on Friday night (due to the detour in Louisiana) so missed the dinner out that night.  However, the next day we made up on the fun by spending a day at the pool.  We rented a cabana at the 21+ Legacy Pool and chilled, drank and eat to make up for the $1.2K minimum to rent the cabana! We made it by ordering a few expensive bottles of champagne at the end to make up for the remaining balance!

That evening, we had dinner at Nobu where we shared several yummy dishes for the table.  And then we went to the Nate show at the Wynn hotel.  The show was hilarious - we were in stitches for the entire show.  So much so that our stomachs hurt the next day!

Sunday was wedding day - the girls did a bit of shopping so that Stacie and Shawna, the two self-proclaimed 'bridesmaids', could get a few items to wear to 'glam' up.  We opted for glittery t-shirts that expressed our love for Vegas and rhinestone 'sexy' hats! The group hung out at the pool for a couple of hours before getting ready.  A limo picked us up to take us to the Graceland Wedding Chapel where the ceremony was held - 15 minutes of Elvis singing three songs, conducting the standard vows and also the 'Elvis' vows! The chapel was quite cute and the service was fun!

We returned to the hotel to have a few celebratory drinks at Collins.  We then had dinner at Mother Wolf, the Italian restaurant at our hotel.  We shared a salad, a couple of pizzas a few pastas - all delicious! 

We all left on Monday with us flying to DC to spend a month. What a great trip!

Vegas and Phoenix - Dec 2023

We flew for the weekend to Phoenix to visit Rak and Ria and decided to do a quick trip to Vegas for one night to see U2 at the Sphere, something Keith had wanted to do ever since he read out this venue.

On Wednesday, we arrived into Vegas in mid-morning and checked into Caesars Palace where we stayed one night.  We grabbed a quick lunch at True Food Kitchen where we had two salads.  Since we had time to kill before the concert, we got a massage in the spa and enjoyed the amenities.  That evening, we had dinner at Gordon Ramsay Pub and Grill where we shared the scallops for our entree - food was just OK.  We then walked over to the Sphere and truly enjoyed the concert.  The graphics on the screens were just amazing and while we were in nose bleed seats, the seats were still quite good!

Since it was a late evening, we slept in the next morning and then flew into Phoenix, arriving around 5pm. We took a taxi over to Rak's house and then went out for Cornish pasties - our favorite - with both Rak and Ria.  

On Friday, Shawna went for a run in the morning and then we met up with Jen and her husband Todd for lunch at OHSO - Jen worked with Shawna at Cigna.   We then picked up groceries and Shawna cooked that evening at Rak's house - serving cheese and crackers to start along with arugula salad and pasta for the meal.  It was great to hang out.

On Saturday, we slept in a bit and then went to play Top Golf - both Shawna and Ria were pretty bad to start but then significantly improved by the third round!!  We had lunch at Nelson's, each getting a sandwich and then Rak picked up supplies for dinner that evening.  Back at the house, we took a nap and then enjoyed some hot tub time before Rak made a yummy meal of mussels, swordfish, mashed potatoes and green beans.

We left early the next morning - Rak gave us a ride to the airport and we flew back to Dallas where we were going to stay for a couple of weeks while Keith recovers from his second foot surgery.

Inaugural RV Trip in Utah - March 2021

One of our dreams is to buy an RV in retirement and spend a few years going around the US and through all national parks.  Bound stateside during the Covid crisis, we decided to make lemonade out of lemons and give this whole RV thing the college try....through some of our favorite countryside in the US.

Accommodation:

Cosmopolitan:  We needed a hotel room that was able to separate into two spaces as we were working on the Friday and the Cosmo had that - with a pocket door between the bedroom and the living area.  It had the added benefit that Keith's parent company owns it, so we were also staying there at the end of the trip while Keith worked in Vegas for a few days after the trip.

Winnebago:  Well, what an experience!  While we had a fantastic time on the trip, we do think that we experienced almost everything that could go wrong in an RV! We rented a 2016 Winnebago Ultra-Lite 31-foot trailer .  While only 5 years old, the interior aesthetic seemed more 1990s - brown on brown was the recurring theme.  So....what happened you ask?  First, the jack stripped, which meant that we couldn't get the trailer off the truck.  And we discovered this on the Sunday morning, with no one to fix it until Monday.  Also, the heater did not work the first night so we were incredibly cold overnight.  Fortunately, there were enough blankets but we had zero desire to get out of bed because it was 32 degrees outside...and possibly colder inside!  While the heater was fixed for a while, it was on and off all week.  The hot water stopped working mid-week, which coincided with the need to use the shower - so we had glacier-water showers.  The toilet clogged for a day which created its own adventure!  And we had a few other minor mishaps - mostly driven by our lack of knowledge!  We did learn a few bits of lingo - like 'stinky slinky' which is the name of the coil tube that connects the RV to the ground to empty the tanks and 'boon docking' which is when you park your RV off the grid!

Wonderland RV Park, Torrey UT:  Our first RV site!  We were assigned space 16, which was a nice, spacious spot in the back corner.  The owner was nice and the shower/toilet block was super-clean.  It is also across the road from a gas station which enabled us to run across and get some "emergency" items like a can opener and ice.  

KOA St George / Hurricane:  This was a bit less exciting.  Just off I-15 on the east side the highway, we were assigned space 58.  The check in area was easy to navigate.  The downside of this site was that our space was in the middle of a long row of RVs, so not as quiet.  Also the toilet/shower block was closed for renovation which meant we needed to use the RV's toilet and shower - which added to the excitement of the week.  

Activities:

We flew to Las Vegas on the Thursday night so that we could work remotely on the Friday and then have a nice dinner in Vegas the Friday night before setting out.  

On Saturday morning, we jumped in a taxi to pick up the RV at the owner's house.  The owners are a nice couple, married for a year.  He is a musician and she was in marketing before moving into the RV renovation business as a result of Covid.  We were shown around two of their RVs under renovation while Shawn was brining our RV over.  We ended up borrowing the couple's minivan to go to Vonn's grocery to do our major shopping trip (Shawna had planned all the meals ahead of time so we had the list at the ready).  The shopping took almost 1.5 hours, but with that done, we drove back to the house for our orientation of the RV.  They had just purchased it a week prior so they were fairly new to this model as well.  It took about 30 mins for the full "tour" and we were on our way, Keith driving the F350 that was towing the trailer.  It didn't take long for Keith to get used to towing the trailer, though within minutes we were stuck at a left turn unable to make the turn with so much traffic in both directions.  So instead took a few rights to get back on the target road...and soon enough we were on I-15 for our 6 hour drive to Torrey Utah.  We did have to stop for gas every couple of hours as the combined truck and 18,000 pound trailer got 11.5 miles to the gallon!  Shawna checked us in to the park and the owner helped us reverse in to the space...Keith made it the first shot!  We arrived at RV park at 7pm, so Shawna quickly made a dinner of salmon and couscous and we went to sleep for the night!

Sunday was spent relaxing at the RV park since we could not unhook the truck from the RV.  We slept in and watched a few shows in bed, read, cooked, napped and did a little day drinking.

On Monday morning, we went to see "Biggie" first thing when he opened so that he could replace the jack and check on the heat.  It only took us about 45 minutes and he charged way less than we thought considering he was the only RV repair shop in town (granted it's a small town).  So, we returned to the RV park to park the RV (no pun intended), unhooked the truck and drove into Capitol Reef to do some hiking.  We hiked the Grand Wash (which is an in/out trail in a canyon) and the Cassidy Arch Trails (which is uphill to a natural bridge made out of the rocks) for a total of 7.5 miles.  We then drove the Scenic Drive in the park to see the views - the park reminded us of Sedona but on a grander scale.

Tuesday was spent getting to our next destination and running errands.  We had a leisurely morning and then packed up the RV to drive to Zion.  After we checked in and parked the RV, we set out to get a few more groceries (namely wine) and a few space heaters since the heat was not working.  We actually only ended up using one of the space heaters (as we found out turning on two tripped the breaker which took us about 15 minutes to find)! But thankfully one was enough and took the chill out of the RV.


On Wednesday, we got up early to drive into Zion - about 45 minutes from our RV park.  We had purchased our shuttle tickets in advance (in Zion, you can't drive into the park - there are shuttles that take you to the various spots within the park) so we were in line for our time window - thankfully there were not too many people in line but when we returned later in the day, the lines were quite long! Unfortunately a few of the great hikes in the park were closed due to a rock slide that had occurred last year but we were able to do one of the famous ones - Angels Landing! The hike is 5.5 miles and is somewhat strenuous (uphill with crazy switch backs) - the last mile is the nail biter with chains to hold on to while you hike up a very thin edge to the top.  Needless to say, Shawna only made it up the first part of the chains and with legs shaking, decided not to make it the rest - so she sat there and waited almost an hour while Keith did the rest - it took that long b/c there were quite a number of people hiking and you had to wait at times to allow others to pass since the trail could really only fit people going in one direction at a time.  Keith took some great photos from the top.  We had our lunch (cheese and crackers) sitting at the area where the chain part of the hike starts with great views!  We then hiked over to the Lower, Middle and Upper Emerald Pools which added another few miles - the pools were not that spectacular and the trail was very crowded. After our hike, we tried to stop for a beer in town but couldn't find parking so opted to head back to the RV and have a few beers there before making dinner.

On Thursday, we got up early again and went back into Zion - this time hiking the Sandbench trail (a recommendation from the park ranger) which is a 7.5 mile, fairly easy trail (although a bit hard as much of the trail is sand) - what was great about the trail is that we hardly saw another person and there were great views. We then took the shuttle over to the last stop to walk the Riverside Walk (about 2 miles) to the entrance of the Narrows - we wanted to see what the water levels were like.  We saw several people setting out to do the Narrows with waders that went up to their chest - we had heard from a few that we spoke to on the shuttle that the water was quite cold and at times did come up to your chest so we opted to try this hike next time when we happen to return in the summer.  This time, we kept our car parked at the entrance and walked over to Zion Brewery across the bridge - unfortunately, they were not serving food but we were able to grab a couple of pints and sit outside by the river.

On Friday, we drove about two hours (so left early) to Bryce Canyon.  While it took a while to get there, we were so glad we made the trip as we both thought it was our favorite park of the trip with such wild and interesting hoodoos (rock formations in columns).  We did the Queens Garden and Peekaboo Loop trails - about 8 miles in total. The hike was moderate with a few icy bits but with stunning views along the way! We had a great picnic spot - right at the part of the hike they call the 'windows'.  After the hike, we returned to the RV for a few beers and dinner.

On Saturday, we drove back to Vegas, after having a leisurely morning. We returned the RV with no issues and were quite happy to check-in to the hotel to get a warm shower.  That afternoon, we treated ourselves to a massage at the hotel spa and then a yummy dinner that Shawna did not have to cook!

On Sunday, Shawna flew out early to go to Louisiana to visit with her mom for the week while Keith caught up on work and stayed in Vegas for the week to visit properties.

Dining:

Cosmo Room Service: we ordered room service for lunch on the friday.  Keith ordered a salad which arrived with no dressing which was less than optimal.  Shawna had ordered a tuna poke bowl as well as pita and hummus, so Keith ate half the hummus as well.  

Mizumi at the Winn:  Delicious dinner - a Micheline star Asian restaurant.  We both started with the Cherry Blossom Margarita, then moved to a bottle of Jordan, Alexander Valley, CA, 2016 and closed out the night with a dessert wine.  Dinner was shared Wild Snapper Sashimi Usuzukuri, Wagyu Gyoza Dumpling, Crispy Brussels Sprouts, Lamb Chop Yakiniku with Yuzu Miso, and Miso Toothfish Saikyo-yaki.  We finished with the Trio of Pineapple for dessert.

Winnebago:  Shawna brought home-cooking to RV life.  We were pretty sure that we were the only ones eating couscous and veggie burgers in the RV park - the other RVs seemed to be more of the hotdog cuisine!  Breakfasts were either avocado toast, omelets, or yogurt/granola/honey/berries.  Lunches were usually hiking and we generally had cheese and crackers we hiked in with us.  Dinners were delicious: they were usually preceded with 2-3 beers and then enjoyed with a bottle of wine.  Everything Shawna cooked was made in double portions so we could have leftovers another night...again, just like home!  The dinners included salmon with veggie couscous, turkey burgers with sweet potato fries and arugula salad, and turkey meat balls with orzo and peppers.  All fantastic!

Jose Andreas Bazaar Meat: After a week of hiking, Keith wanted some real meat. Being fans of Jose Andreas, we decided to give this place a try.  We arrived a bit early for our reservation so sat at the bar to enjoy a drink - Keith had a great gin and tonic and Shawna tried the 'cotton candy' mojito which involved pouring some liquid over actual cotton candy to create a smoky effect - quite the show! For dinner, we had a great bottle recommended by the sommelier - 2016 Aalto Ribera Del Duero.  We also shared the Super-Giant Pork Skin Chicharron (which was quite giant), Kobe Eye of the Rib prepared table side, Tenderloin, Setas al Ajillo (grilled mushrooms) and Patatas Bravas.  Since we were filling quite full, we opted to skip dessert.  Everything was very tasty.
